This is a great book. You learn so much about miso and its health-supporting qualities -- and even how to make it yourself if you want to.

There are also plenty of recipes, so that you get a really good idea of many ways to use this Japanese food which was credited for helping so many Japanese overcome radiation sickness after Hiroshima and Nagasaki. (NOTE: The book does not mention Hiroshima or Nagasaki; that's just me.)

I liked this book so much I literally did not want to ever return it to the library -- so I bit the bullet and bought a copy for myself.
